Father's Day is this Sunday and many people are planning to make a special meal for their dad.

This casserole is easy to make and the best part is you can actually make it ahead of time, even the night before, and then just throw it in the morning for brunch! Check it out!

  • 1 bag (20 oz) refrigerated cooked shredded hash brown potatoes
  • 1 package taco seasoning mix
  • 1 lb turkey or pork breakfast sausage
  • 1 medium onion, chopped
  • 12 eggs
  • 2 cups shredded Cheddar cheese
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1 1/2 cups salsa
  1.  Heat oven to 350°F. Spray 13x9x2-inch baking dish with cooking spray. Mix 1 tablespoon of the taco seasoning mix into hash brown potatoes and put into the baking dish.
  2. Cook breakfast sausage and onion until thoroughly cooked, drain.
  3. Beat eggs, cheese, milk, salt, pepper and remaining taco seasoning and whisk until well mixed. Stir in sausage and salsa. Pour over hash browns in baking dish.
  4. Bake uncovered about 40 minutes or until eggs are set in center.
