Sunday is Mother's Day and maybe you want to make your mother a special brunch. Trust me when I say mothers love when their family puts any effort into making them feel special!

I came across this recipe and it sounds really good to me, so if you're planning on making your mother brunch give it a try!

What's really cool is you can prepare this the day before and just have to bake before serving. Easy!

  • 1 loaf day old challah, sliced into 3/4″ thick slices ( I will be using gluten free bread)
  • 1 crisp apple, sliced 1/4″ thick
  • 4 eggs
  • 3 cups milk
  • 3 teaspoons sugar
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 tablespoon vanilla extract

Grease a 9 x 13″ baking pan. Arrange the bread so that they are overlapping, tearing a few pieces in half if needed. Tuck the apple slices throughout.

In a medium mixing bowl, lightly beat the eggs. Whisk in the milk, sugar, salt, cinnamon, and vanilla. Pour over the bread. Make sure that all of the slices are just about covered. You can make ahead of time and refrigerate overnight. Otherwise, cover and set aside for at least a half hour, or longer if you have time.

Preheat the oven to 425 degrees. Bake for 30 minutes, until the french toast is a light golden brown.

Serve immediately with maple syrup and extra apple slices, and a pinch of cinnamon if you'd like.
