Drink of the Week – ‘Very Pink Raspberry Cosmopolitan’
In honor of my slumber party this weekend, I decided I needed to do a girly cocktail to get us in the slumber party spirit. Everyone knows a Cosmo is as girly as it gets. Plus, this one is a pretty pink color! See you all Saturday!
- 2 cups frozen raspberries
- 1 & ½ cups water
Combine frozen raspberries and 1½ cups of water and bring to a simmer, mashing the berries against the sides of the pain to release their juices. Strain into a cup or bowl scraping the seeds with a spatula along the bottom of the strainer to extract all the juice but not the seeds. Set aside.
- 2 ounces raspberry juice
- 2 ounces raspberry liqueur
- 4 oz good vodka
- Juice from ½ lime
- 1 ounce simple syrup*
- Pink sugar crystals**
- Raspberries for garnish
- In a shaker combine the raspberry juice that you made, raspberry liqueur, vodka and lime juice over ice and shake until ice cold.
- Dip the rims of the martini glasses in simple syrup then into pink sugar crystals.
- Strain liquid into martini glasses and garnish with a few raspberries.
*If you don't know how to make simple syrup. it's super easy! Bring equal parts sugar and water to boil in a saucepan until the sugar is dissolved , and then let cool. Sometimes you can find it in the store already made too.
**If you can't find pink sugar or you don't want to spend money on them, just take sugar and pink food coloring and add 1 to 2 drops at a time to get your desired color. Very easy!
