Coconut Margarita -Thirsty Thursday
I am obsessed with anything coconut. Coconut scented body cream, coconut scented bath salts, coconut scented soap, coconut oil, coconut scented candles, coconut ice cream, Almond Joys, I think you get the point! I love the way it smells and tastes and that's why I want to share this delicious drink with you guys- a coconut margarita.
Two things that I absolutely love are combined in this drink, pina coladas and margaritas. YUM!
- 1/2 cup coconut water
- 1/2 cup of sugar
- 1 TBS lime juice
- 2 cups coconut milk
- 1/2 cup coconut rum
- 1/4 cup of good tequila
- Shredded coconut
You're going to make a simple syrup out of the coconut water, sugar and lime juice. So you heat the coconut water and sugar until the sugar is all dissolved, remove from heat and add lime juice. Let the syrup cool. You can even make this a few days in advance if you're making it for a party.
Dip the rim of your margarita glasses with the coconut syrup then into the shredded coconut.
In a blender add the coconut milk, rum, tequila, the coconut simple syrup and some ice. Blend until smooth.
This is definitely a tropical, summer drink. But I made it in the winter too because it almost looked like snow with the shredded coconut on the glasses. It's a very pretty drink and it taste just as good as it looks.
